  • 1kg cauliflower (1 medium head), florets are broken off and stalk unevenly chopped
  • 250g potatoes, peeled and roughly diced
  • One large onion peeled and chopped roughly
  • 2 cups unsweetened almond milk or soy milk
  • 2 cups of chicken broth or vegetable stock
  • Salt and pepper to taste
  • For garnishing (optional)
  • Thyme (highly recommended!)
  • Cream and olive oil

Instructions

Put all the Soup ingredients (excluding the salt and pepper) in a big pot over very high heat while making them boil, then turn the heat down to a moderate level and let it simmer for about 10 to 15 minutes, or until the cauliflower becomes very soft.
