Repeat with the rest of the cauliflower. The “ cauliflower rice” can be dished at this stage, or stashed in the fridge for up to five days. To serve it cold and uncooked, stir the rice with two tablespoons of olive oil, and then season with salt and pepper. If you like to serve it cooked and warm, gently fry the cauliflower rice with one tablespoon olive oil for about 2 to 3 minutes then season with salt and pepper.
2. Cauliflower Soup

- Three garlic cloves chopped roughly

Put all the Soup ingredients (excluding the salt and pepper) in a big pot over very high heat while making them boil, then turn the heat down to a moderate level and let it simmer for about 10 to 15 minutes, or until the cauliflower becomes very soft. Using a hand-held blender, blend until it becomes smooth, then add enough pinch of salt and pepper to taste as desired.
If the soup becomes too thick for you, add more milk, water or stock (and more salt if required). If you want it even thicker, let it simmer in the cooker for a little longer to drain down and become thick (be careful not to make it gel so much that it becomes too salty).
Garnish and serve with spring onion. You can also drizzle with cream and olive oil if desired.
3. Mashed cauliflower
- One medium cauliflower or 4 cups cauliflower florets
- 1 1/2 ounces (40 grams) cream cheese
- Salt and fresh grounded black pepper
- Pinch ground or grated nutmeg
- One tablespoon sliced green onion, optional
Add a reasonable quantity of salt to water in a large pot and bring it to boil. Cut the cauliflower into florets and then add them to the boiling water and cook for about 8 to 10 minutes when it becomes soft or until a fork can easily pierce through the cauliflower. Drain the cauliflower, and then throw back into the hot pot (without heat) and cover with lid. Let it stand 2 to 3 minutes.
Add the cream cheese, a pinch of salt and the freshly ground black pepper immediately to the cauliflower. Then, use a potato masher in smashing the cauliflower. Finish with a pinch of nutmeg. (If you have the whole nutmeg, just grate a little over the cauliflower using a micro plane). Stir then serve with sliced green onions on top.
