This easy tofu quinoa dish is easy to make, high in protein and fibre, packed with veggies and taste amazing.
1/4 cup toasted sesame oil
2 tablespoons soy sauce or gluten-free tamari
1 teaspoon tapioca starch or arrowroot/corn flour
1/2 teaspoon garlic powder
1/2 teaspoon ginger, freshly grated
1/4 - 1/2 teaspoon crushed pepper flakes
Black sesame seeds to garnish for the dressing
Preheat the oven to 180ºC.
Slice the green beans in half and arrange them along one-third of a baking sheet. Cut the tofu into bite-sized pieces and put it on the baking sheet as well. Finally, arrange the broccoli along the last third of baking sheet.
Whisk together the dressing ingredients until smooth and pour over the veggies and tofu. Stir together until everything is coated. Bake on the center rack for 25 - 30 minutes (flipping halfway through), until the veggies are nice and roasted.
Assemble your bowls: add 1/2 cup of quinoa to each, along with 1/4 of the veggies and tofu. Drizzle with additional tamari and hot sauce if desired!
