Cauliflower rice is an excellent grain-free rice alternative.
It provides a healthy, low carb, low calorie rice alternative for so many meal options and tastes delicious! An amazingly healthy twist on takeout fried rice and you can’t even tell the difference. It’s also a great way to squeeze more servings of vegetables into your day.
Ingredients
1/2 Onion, medium size (chopped)
3 Cloves garlic (chopped)
1 head of cauliflower washed
1 tbsp olive oil
Unrefined sea salt and pepper to taste
Method
Slice the cauliflower head in half and use a knife to remove all the florets. Cut some of the larger florets into smaller pieces so they'll fit within the chute of your food processor.
Insert the grater adapter into your food processor and start feeding the cauliflower florets through the top. Depending on the size of your food processor, you may have to empty it halfway through.
Heat the olive oil in a large pan and sauté the diced onion for a few minutes, until its translucent.
Add the cauliflower rice to the pan and sauté for another 5-7 minutes.
Season with salt and pepper and serve immediately.
Suggestions
For garnishing:
Sprinkle some toasted sesame seeds.
Chopped fresh parsley.
Chopped fresh coriander.
Nutritional value of cauliflower
High in fibre (1 cup of cauliflower yields 3g fibre), which is important for digestive health and may reduce the risk of several chronic diseases.
