1 teaspoon olive oil
1 medium onion, sliced
150g (1 cup) firm or medium firm tofu
1 large tomato, sliced
Zucchini, sliced (optional)
or any other favourite vegetables
Unrefined sea salt to taste
Pinch of turmeric powder
1 teaspoon of curry powder
Sauté onion in a frying pan until lightly brown.
Add in sliced tomato. Continue to stir for 2 minutes.
Mash firm tofu and add into the pan.
Add in seasonings and continue to stir-fry for 5 minutes and serve.
You can have a large plate of scrambled tofu with veggies on its own or some brown rice or quinoa to go with it. Cook a larger portion and keep it for lunch the next day in a wholegrain wrap or sandwich.
